Sweet Corn Muffins

You’ll Need:

2 1/4 c. flour
1 1/2 c. sugar
1 c. + 2 tbsp. cornmeal
1 tbsp. + 1 1/2 tsp. baking powder
3/4 tsp. salt
3 eggs
3/4 c. butter
1 1/2 c. milk
paper cupcake liners

How To:

Preheat the oven to 350F.  Place paper cups into a muffin tin.

In a mixing bowl, combine dry ingredients.

Add eggs, shortening, and 3/4 cup of milk.  Beat for 1 minute.

Add remaining milk; beat until blended.

Fill paper-lined muffin cups three-quarters full.

Bake for 25-30 minutes or until muffins test done.
