Maple BBQ Pulled Chicken Sandwiches

You’ll Need:

2 tbsp. olive oil
4 garlic cloves, minced
1/4 c. tomato paste
2 tbsp. oregano
1 1/2 tbsp. paprika
1 tbsp. chili powder
2 tsp. cumin
1 tsp. ground ginger
1 tsp. salt
2 tbsp. Dijon mustard
1/3 c. packed brown sugar
1 tbsp. Worcestershire sauce
2 tsp. soy sauce
3/4 c. maple syrup
1/2 c. cider vinegar
1/4 c. water
3 boneless, skinless chicken breasts
8 hamburger buns

How To:

In a large pot, heat the oil.  Cook garlic.  Stir in tomato paste, oregano, paprika, chili powder, cumin, ginger, salt, mustard, brown sugar, Worcestershire sauce, soy sauce, maple syrup, vinegar, and water until smooth.  Bring to a boil.

When the sauce is boiling, add the chicken, making sure that the pieces are covered in sauce and not overlapping.  Reduce the heat to low, cover, and cook for 1-2 hours or until the chicken is cooked through (10 minutes if using precooked, shredded chicken).  Flip the chicken breasts halfway and keep covered in sauce.

When chicken is cooked, turn off the heat and remove chicken.  Once it is cool enough to handle, shred chicken and return to sauce.  If it is not hot, return to heat to warm the mixture.

Scoop on to hamburger buns and serve.
