Spiced Apple Muffins

You’ll Need:

1/2 cup + 2 tablespoons sugar
2 teaspoons baking powder
1 teaspoon ground cinnamon
2 1/4 cups flour
1 large egg
1 cup milk
1/4 cup butter, melted and cooled
2 cups apples, peeled and fi nely chopped
1/2 cup chopped walnuts, raisins, or dried cranberries (optional)


How To:

Preheat oven to 400F. Line the wells of a muffin tin with papers.

Whisk together 1/2 cup sugar, baking powder, 1/2 teaspoon cinnamon, and flour.

Whisk the egg, beat in the milk and melted butter. Quickly combine the two mixtures. Fold in the apple and walnuts/raisins/cranberries if desired. Scoop into prepared muffin tin. Mix remaining cinnamon and sugar, sprinkle on top. Bake to 20-22 minutes or until golden brown and a toothpick inserted in the center comes out clean. Remove from the oven and cool in pan to 5 minutes. As soon as muffins are cool enough to handle, tip them out of the pan and place them on a cooling rack to cool completely.
