Healthy Fruit Nut Muffins

You’ll Need:

2 cups flour
1/2 cup packed dark brown sugar
1 teaspoon cinnamon
1 teaspoon baking powder
1/2 teaspoon baking soda
1 egg, lightly beaten
1 cup plain yogurt
1/2 cup butter, melted
1 teaspoon vanilla
1/2 cup shredded carrots
1 cup coarsely chopped, peeled apple
1/2 cup raisins
1/2 cup dried cranberries
1/2 cup coconut
1/4 cup sliced almonds

How To:

Preheat the over to 400F. Spray muffin tin with nonstick cooking spray.

Combine flour, brown sugar, cinnamon, baking powder, and baking soda in a large bowl. Add the egg, yogurt, butter, and vanilla and mix with a wooden spoon – do not over-mix. Stir in the carrots, apples, raisins, cranberries, coconut, and almonds.

The batter will be thick!

Fill each muffin cup with 1/3 cup batter. Bake for 20-25 minutes or until golden brown. Cool on a wire rack.
